Smelser Family Pasta Salad


Boil multicolored rotini noodles- rinse and let cool considerably.

Dice 2 large cucumbers, a red onion, add some kalamata olives and generous portions of feta cheese and mix all together with pasta noodles.

Pour over a small quantity of olive oil, the juice of 4 lemons and sprinkle with fresh dill. Serve chilled.

I enjoy this dish for many reasons not the least of which is that it is very easy and quick to make. More importantly, it is a variation on a recipe that most members of my family have made in one shape or form over the years and it calls to mind family gatherings. Also, it is one of the few foods that I can make and not ruin!

This dish goes wonderfully with a very cold glass of your favorite Chardonnay and most Italian Baroque music involving a violin.
